Broccoli Gratin

Ingredients
- Servings: 6
- 2 lbs broccoli
- 1 1/2 lbs potatoes
- 2 eggs
- 4 ounces gruyere cheese, grated
- 4 ounces creme fraiche
- 2 ounces butter
- salt & freshly ground black pepper
- 1 pinch nutmeg
Recipe
- 1 peel the potatoes and cook in boiling salted water.
- 2 wash and chop up the broccoli and cook in boiling salted water for 20 minutes.
- 3 drain the brocoli and potatoes and blast quickly in a blender.
- 4 add the creme fraiche, half the gruyere and the egg yolks.
- 5 season with salt, pepper and nutmeg.
- 6 beat the egg whites until firm and add.
- 7 pour into a gratin or baking tin, add bits of butter and the rest of the cheese.
- 8 bake at 425f for 30 minutes.
