Boring Peas Made Yummy!

Ingredients

• Servings: 4
• 4 cups frozen tiny peas
• 1 garlic clove, minced
• 2 tablespoons sour cream, fat-free
• 2 tablespoons lemon zest
• 2 tablespoons lemon juice
• 1/2 teaspoon tarragon
• salt and pepper, to taste

Recipe

• 1 bring peas, garlic and 1/2 cup water to a boil in a small pot.
• 2 remove from heat and puree with a hand held blender until creamy, but still studded with pieces of peas.
• 3 transfer to a bowl and stir in the sour cream, lemon zest, tarragon and lemon juice.
• 4 add salt and pepper to taste.
