Chocolate Chip Vanilla Gems

Total Time: 25 mins Preparation Time: 7 mins Cook Time: 18 mins

Ingredients

  • Servings: 6
  • 2 cups flour
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cup mini chocolate chip
  • 1/3 cup butter, melted
  • 1 cup milk, warmed to room temperature
  • 1 egg
  • 1 tablespoon vanilla extract

Recipe

  • 1 pre heat oven to 400 degrees.
  • 2 grease 24 mini muffin pan.
  • 3 stir together in a mixing bowl all the dry ingredients and the chocolate chips.
  • 4 make a well in the flour mix and set aside.
  • 5 in another bowl whisk together all the wet ingredients and pour into the well in the flour mix, stirring together gently until all the flour is mixed inches
  • 6 don't over mix there will be some lumps.
  • 7 spoon batter into muffin pan filling to the top.
  • 8 bake 15 - 18 minutes, or until top just begin to get golden.
  • 9 note: quantities will vary based on the size of muffin pan, there are many different sized mini muffin pans, if they are larger, don't fill all the way to the top.

Curried Egg And Artichoke Spread

Ingredients

  • 6 eggs, hardboiled, peeled and chopped
  • 6 ounces artichoke hearts
  • 1/4 cup mayonnaise (can substitute plain yogurt)
  • 1/2 cup sour cream
  • salt
  • pepper
  • curry powder

Recipe

  • 1 mix all ingredients.
  • 2 adjust spices.

Curried Cornmeal Muffins

Ingredients

  • 1/4 cup chopped green onion
  • 3 tablespoons oil
  • 1 1/4 cups cornmeal
  • 3/4 cup sifted flour
  • 3/4 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 tablespoon curry powder
  • 1 egg, beaten
  • 1 cup milk

Recipe

  • 1 preheat oven to 425 degrees f.
  • 2 cook onion in oil, over medium heat, until tender.
  • 3 while onion is cooking, sift the cornmeal, flour, salt baking powder, sugar and curry powder together in a bowl.
  • 4 add the egg, milk and onion with oil to dry mix and stir until just mixed.
  • 5 fill 12 greased medium muffin cups 2/3 full and bake for 15 to 18 minutes.
  • 6 serve hot.

Cheese Scones

Ingredients

  • Servings: 12
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1 cup sharp cheddar cheese
  • 1 egg
  • 2/3 cup milk
  • 10 -15 drops tabasco sauce

Recipe

  • 1 in large bowl add flour, sugar, baking powerd and salt. cut in butter until crumbly. add cheese.
  • 2 in a small bowl beat the egg until froth then stirn in the milk and tobasco. make a well in the center of the dry ingredients and pour in the milk mixture. stir with a fork to form a soft dough. turn out onto floured surface and knead 7 or 8 times. press out into 1/2 inch to 3/4 inch thickness. with a glass that has had the rim dipped generously in flour, use it to cut out disks. gather remaining dough and repeat process. the final dough should be rolled into two or three balls and flatten into approximately the same shape as the cut-outs. let sit for 1/2 hour to 1 hour (optional).
  • 3 bake in preheated 425 f oven for 15 minutes or until risen and browned slightly.
  • 4 serve hot.

Crazy Corna's Berry Cobbler

Ingredients

  • Servings: 6
  • 1 (16 ounce) can mixed berry pie filling
  • 3 3/4 cups buttermilk pancake mix or 3 3/4 cups baking mix
  • 1/4 cup butter or 1/4 cup applesauce
  • 1 1/2 cups cold milk
  • 3 cups frozen mixed berries, thawed (optional)

Recipe

  • 1 preheat oven to 400°f.
  • 2 combine thawed, frozen mixed berries with pie filling. place in oven safe baking dish.
  • 3 combine baking mix with butter (or applesauce for a low fat version). cut or pinch butter into mix until lumps resemble coarse meal.
  • 4 drop biscuit mix on top of berries.
  • 5 bake 20 minutes.

Curried Corn

Ingredients

  • 2 cups corn kernels (frozen or fresh)
  • 2 tablespoons margarine
  • 3 tablespoons onions, finely chopped
  • 1/2 teaspoon curry powder
  • 1/2 cup light sour cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground pepper

Recipe

  • 1 put first 4 ingredients into saucepan. saute for 1 minute.
  • 2 cover and simmer slowly until tender, about 8 to 10 minutes. stir often.
  • 3 add sour cream, salt and pepper. serves 3.

Cook's Fried Corn

Ingredients

  • 1 (16 ounce) package frozen corn or 2 (8 ounce) cans corn
  • 6 slices bacon, cut into 1/2 -inch strips
  • 1/4 cup green bell pepper, fine diced
  • 1/4 cup onion, fine diced
  • sea salt
  • black pepper

Recipe

  • 1 fry bacon in a large frying pan until bacon is browned; reduce heat, add onion and peppers.
  • 2 cook 3-5 minutes, until onions are translucent. pour off bacon grease.
  • 3 meanwhile, cook and drain corn in separate pan.
  • 4 at medium heat, add corn to bacon and onions in frying pan and stir-fry until corn starts to brown.
  • 5 season with sea salt and black pepper to taste.
