- 2 pounds ground beef
- 1 tablespoon olive oil
- 2 onions, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 1 (12 fluid ounce) can or bottle flat
- 1 cup water
- 2 tablespoons chili powder
- salt and pepper to taste
- 1/2 teaspoon dried parsley
- 1 teaspoon ground cumin
- 1 (6 ounce) can tomato paste
- 1 (15 ounce) can kidney beans
- 1 cup sour cream

Cook Time: 1 hr
- in a large skillet over medium heat, cook beef until brown. drain and let cool. rinse with water. drain.
- in a large pot over medium heat, cook onion, bell pepper and celery in oil until just tender. stir in ground beef, , water, chili powder, salt, pepper, parsley and cumin. reduce heat, cover and simmer 30 minutes.
- stir in tomato paste and cook 10 minutes more.
- stir in kidney beans and heat through. remove from heat and stir in sour cream.
