Braised Celery (irish)

Ingredients
- Servings: 4
- 1 head celery
- 1 medium onion
- 1 teaspoon fresh parsley leaves, chopped
- 2 slices bacon
- 10 ounces chicken stock
- salt and black pepper
- 1 ounce butter
Recipe
- 1 clean celery, cut into one-inch pieces and place in a casserole dish.
- 2 finely chop bacon and onion and sprinkle over celery along with chopped parsley.
- 3 pour on stock. dot with knobs of butter. cover dish and bake in a moderate oven for 30-45 minutes.
