Breakfast Cookies W/fruit

Ingredients
- 2 cups brown sugar
- 2 cups rolled oats
- 1 1/2 cups whole wheat flour
- 1 1/2 cups flour
- 1 cup flax seed
- 1 tablespoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/2 tablespoons cinnamon
- 1 teaspoon nutmeg
- 1/4 cup canola oil
- 3 eggs
- 1/2 cup applesauce
- 1/4 cup chopped dried apricots or 1/4 cup prune
- 1/4 cup raisins
- 1 cup walnuts
- 1 cup chopped walnuts (optional)
Recipe
- 1 preheat oven to 325.
- 2 mix all ingredients together in large mixing bowl.
- 3 work with batter and form into 2-3 inch balls. (use about 1/4 c measuring cup to scoop batter).
- 4 place on cookie sheets about 2 inches apart.
- 5 use the bottom of a glass dipped in water to flatten.
- 6 bake about 8 minutes for soft cookies.
- 7 cool.
