Breakfast Cookies W/fruit

Total Time: 18 mins Preparation Time: 10 mins Cook Time: 8 mins

Ingredients

  • 2 cups brown sugar
  • 2 cups rolled oats
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups flour
  • 1 cup flax seed
  • 1 tablespoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 1/2 tablespoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 cup canola oil
  • 3 eggs
  • 1/2 cup applesauce
  • 1/4 cup chopped dried apricots or 1/4 cup prune
  • 1/4 cup raisins
  • 1 cup walnuts
  • 1 cup chopped walnuts (optional)

Recipe

  • 1 preheat oven to 325.
  • 2 mix all ingredients together in large mixing bowl.
  • 3 work with batter and form into 2-3 inch balls. (use about 1/4 c measuring cup to scoop batter).
  • 4 place on cookie sheets about 2 inches apart.
  • 5 use the bottom of a glass dipped in water to flatten.
  • 6 bake about 8 minutes for soft cookies.
  • 7 cool.
