Breakfast Chilli Beans

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 2 red onions, chopped
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili flakes
  • salt and pepper
  • 2 (400 g) cans chopped tomatoes
  • 1 (400 g) can butter beans
  • 1 (400 g) can cannellini beans
  • 2 tablespoons balsamic vinegar

Recipe

  • 1 place oil, onions, paprika, coriander, chilli, salt and pepper into medium saucepan.
  • 2 cook over medium heat for 5 minutes or till onions are soft.
  • 3 add tomatoes, simmer on low for 15 minutes.
  • 4 add beans and balsamic vinegar.
  • 5 cook 5 more minutes till beans are warmed through.
  • 6 serve with toast.
