Broccoli Cheddar Casserole

Ingredients

- 4 cups chopped fresh broccoli
- 1/2 cup finely chopped onion
- 6 tablespoons butter
- 6 eggs, beaten
- 1 cup whipping cream
- 1 cup cheddar cheese, shredded & divided (4 oz)
- 1 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 in a skillet over medium heat, saute broccoli and onion in butter until crisp tender, about 5 minutes; set aside.
- 2 in a bowl, beat eggs.
- 3 add whipping cream and 1/3 cups of cheese; mix well.
- 4 stir in the broccoli mixture, salt and pepper.
- 5 pour into a greased 3 quart baking dish; set in a larger pan filled with 1 inch of hot water.
- 6 bake, uncovered, at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean.
- 7 sprinkle with remaining cheese.
- 8 let stand 10 minutes before serving.
