Broccoli And Bean Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 4 cups low sodium vegetable broth
  • 1 lb broccoli, chopped
  • 1 (15 ounce) can reduced-sodium navy beans, drained and rinsed (or other low-sodium white beans)
  • 1/4 teaspoon black pepper (or to taste)

Recipe

  • 1 place all ingredients in large saucepan (3 quarts or more).
  • 2 bring soup to a boil, stirring several times so bottom doesn’t burn.
  • 3 reduce the heat, cover the pan, and simmer the soup for about 20 minutes or until the vegetables are tender.
