Bran And Carrot Muffins

Ingredients

- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup oil
- 2 cups natural bran
- 2 cups milk
- 1 teaspoon salt
- 1 cup raisins
- 2 1/2 teaspoons bicarbonate of soda
- 1 teaspoon vanilla essence
- 2 1/2 cups flour
Recipe
- 1 cream the egg and sugar.
- 2 add the oil, vanilla and milk. beat well.
- 3 add the flour, salt , bran and bicarbonate of soda. mix.
- 4 add the raisins.
- 5 leave to stand overnight.
- 6 stir in the morning.
- 7 bake at 180c for 20 minutes.
- 8 variations: add grated carrots, grated apple or nuts you can add apple puree in place of half of the milk.
