Braised Rabbit

Total Time: 1 hr 20 mins Preparation Time: 10 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 1 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 rabbit, dressed and cut for frying
  • 1 egg, well beaten
  • 1 tablespoon water
  • 1 cup dry breadcrumbs
  • 6 tablespoons lard or 6 tablespoons bacon drippings
  • 1 cup water

Recipe

  • 1 combine the flour, salt and pepper.
  • 2 dredge the rabbit pieces in the seasoned flour.
  • 3 combine the egg and 1 t water.
  • 4 dip the rabbit pieces in the egg.
  • 5 coat the pieces well with bread crumbs.
  • 6 brown on all sides in the hot lard or bacon drippings.
  • 7 slowly add 1 c water to the skillet and cover tightly.
  • 8 simmer 1 hour or more until tender.
