Braised Rabbit

Ingredients
- Servings: 4
- 1 cup flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 rabbit, dressed and cut for frying
- 1 egg, well beaten
- 1 tablespoon water
- 1 cup dry breadcrumbs
- 6 tablespoons lard or 6 tablespoons bacon drippings
- 1 cup water
Recipe
- 1 combine the flour, salt and pepper.
- 2 dredge the rabbit pieces in the seasoned flour.
- 3 combine the egg and 1 t water.
- 4 dip the rabbit pieces in the egg.
- 5 coat the pieces well with bread crumbs.
- 6 brown on all sides in the hot lard or bacon drippings.
- 7 slowly add 1 c water to the skillet and cover tightly.
- 8 simmer 1 hour or more until tender.
