Broccoli And Cheddar Soup

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 3 quarts water
  • 3/4 cup water
  • 6 cups broccoli florets
  • 1/2 teaspoon salt
  • 1 teaspoon margarine
  • 1/2 teaspoon dried oregano
  • 1 cup chopped onion
  • 1/4 teaspoon dried whole thyme
  • 1 clove garlic, minced
  • 1/8 teaspoon ground black pepper
  • 1 cup plain low-fat yogurt
  • 1/8 teaspoon green chili pepper flakes
  • 2 (10 1/2 ounce) cans low sodium chicken broth
  • 1 cup shredded cheddar cheese, divided

Recipe

  • 1 bring 3 quarts water to boil in a dutch oven; add broccoli and cook 7 minutess or until tender, drain; set aside.

  • 11 add 3/4 cup cheese, stirring until melted.
  • 12 ladle soup into bowls; top with remaining cheese.
