Borage Fritters - Frittelle Di Borragine

Ingredients

- 2 eggs
- 1/2 cup flour
- 2 teaspoons baking powder
- 1 cup cold water
- 1/4 cup grated parmigiano-reggiano cheese
- salt and pepper
- 1 bunch borage, leaves cut into strips
- extra virgin olive oil, for frying
Recipe
- 1 in a medium-sized bowl, combine first six ingredients; whisk well to combine.
- 2 cover and rest for at least 2 hours.
- 3 heat two inches of oil to 350f in a large saucepan.
- 4 stir the borage into the batter.
- 5 drop by tablespoonfuls a few at a time (you don't want to crowd the fritters) into the hot oil and fry until golden brown.
- 6 remove from the oil and drain wellon a paper towel lined plate.
- 7 sprinkle with salt and serve immediately.
