Borage Fritters - Frittelle Di Borragine

Ingredients

  • Servings: 4
  • 2 eggs
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1 cup cold water
  • 1/4 cup grated parmigiano-reggiano cheese
  • salt and pepper
  • 1 bunch borage, leaves cut into strips
  • extra virgin olive oil, for frying

Recipe

  • 1 in a medium-sized bowl, combine first six ingredients; whisk well to combine.
  • 2 cover and rest for at least 2 hours.
  • 3 heat two inches of oil to 350f in a large saucepan.
  • 4 stir the borage into the batter.
  • 5 drop by tablespoonfuls a few at a time (you don't want to crowd the fritters) into the hot oil and fry until golden brown.
  • 6 remove from the oil and drain wellon a paper towel lined plate.
  • 7 sprinkle with salt and serve immediately.
