Broccoli Cheese Soup

Ingredients
- Servings: 4
- 4 cups chicken broth
- 1 cup water
- 1 cup half-and-half
- 1 cup shredded cheddar cheese
- 1/2 cup flour
- 1/8 cup grated onion, juice and all
- 1/4 teaspoon fresh ground black pepper
- 4 cups broccoli florets (cut small)
- 1/2 cup shredded cheddar cheese
- 2 teaspoons fresh parsley, chopped
Recipe
- 1 combine chicken broth, water, half-and-half, flour, onion and pepper in large saucepan.
- 2 whisk to combine.
- 3 add cheddar cheese.
- 4 whisk again.
- 5 turn heat to high and bring to a boil.
- 6 stir occasionally.
- 7 turn heat to low.
- 8 add broccoli and simmer for 15 minutes check broccoli for doneness.
- 9 cook additional 5 to 10 minutes if necessary.
- 10 it should be bright green and tender, not olive green and mushy.
- 11 for each bowl, top with one tbs cheddar cheese and 1/2 tsp parsley.
