Broccoli Gratin

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 lbs broccoli
  • 1 1/2 lbs potatoes
  • 2 eggs
  • 4 ounces gruyere cheese, grated
  • 4 ounces creme fraiche
  • 2 ounces butter
  • salt & freshly ground black pepper
  • 1 pinch nutmeg

Recipe

  • 1 peel the potatoes and cook in boiling salted water.
  • 2 wash and chop up the broccoli and cook in boiling salted water for 20 minutes.
  • 3 drain the brocoli and potatoes and blast quickly in a blender.
  • 4 add the creme fraiche, half the gruyere and the egg yolks.
  • 5 season with salt, pepper and nutmeg.
  • 6 beat the egg whites until firm and add.
  • 7 pour into a gratin or baking tin, add bits of butter and the rest of the cheese.
  • 8 bake at 425f for 30 minutes.
