Black Beans And Rice With Cheese

Ingredients

- 1 tablespoon olive oil 
- 1 cup chopped onion (1 medium onion) 
- 1 cup chopped red bell pepper (1 large) 
- 6 garlic cloves, minced 
- 3/4 cup water 
- 2 teaspoons chili powder 
- 1 teaspoon salt 
- 1 teaspoon dried oregano 
- 1 teaspoon ground cumin 
- 1/2 teaspoon ground coriander 
- 1/2 teaspoon ground red pepper 
- 2 (15 ounce) cans black beans, rinsed and drained 
- 2 cups hot cooked brown rice 
- 1/2 cup shredded reduced-fat cheddar cheese 
Recipe
- 1 prepare brown rice according to package directions. 
- 2 while brown rice is cooking heat oil in a medium saucepan over medium heat. 
- 3 add onion and bell pepper; cook 5 minutes or until tender, stirring occasionally. 
- 4 ladd garlic; cook 1 minute. 
- 5 add water and next 7 ingredients; bring to a boil. cover, reduce heat, and simmer 10 minutes or until thoroughly heated.
