Chicken In Creamy Avocado Sauce

Ingredients

  • Servings: 4
  • 2 whole chicken breasts
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 garlic cloves, minced
  • 1 (8 ounce) can stewed tomatoes
  • 1/3 cup sour cream
  • 1 avocado, ripe, peeled, seeded, and diced
  • 1/4 cup fresh cilantro, coarsely chopped

Recipe

  • 1 pound chicken to 1/2 inch thickness.
  • 2 heat oil in a large skillet.
  • 3 sprinkle chicken with cumin, salt, and cayenne pepper.
