Creamy Mushroom & Carrot Side

Ingredients
- Servings: 4
- 500 g fresh mushrooms or 500 g mixed mushrooms
- 8 baby carrots
- 2 teaspoons fresh chives
- 300 g single cream
- 20 g butter
- salt
- pepper
Recipe
- 1 slice your carrots into batons and put on the boil to cook.
- 2 slice your mushrooms (you can use any type or a mixture).
- 3 finely chop your chives.
- 4 add the butter to a frying pan and once melted add the mushrooms, chives, salt and pepper and saute lightly for about 2-3 minutes.
- 5 add half the tub of cream and stir for about 2 more minutes.
- 6 add the other half of the tub of cream and stir again for 2 minutes.
- 7 take the carrots off the boil, drain and add the cream and mushroom mixture to the carrot pan.
- 8 mix and serve topped with parsley.
