Ingredients
- 1/2 cup scallion, chopped
- 1 garlic clove, chopped
- 1 cup tomato, chopped
- 2 tablespoons cilantro
- 3 cups spinach, chopped
- 3 cups collard greens, chopped
- 1 serrano pepper, seeded and chopped
- 6 (10 inch) whole wheat tortillas
Recipe
- 1 combine all ingredients but tortillas in blender.
- 2 blend into chunky paste.
- 3 spread evenly amongst tortillas.
- 4 roll tortillas, seal in individual plastic containers and freeze.
