Chewy Gluten Free Banana Biscuits

Ingredients

  • Servings: 12
  • 1 cup gluten-free flour (see gluten free flour blend)
  • 1/2 teaspoon xanthan gum or 1/2 teaspoon guar gum
  • 1/2 cup tapioca flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3 -4 tablespoons sugar
  • 2 large bananas, mashed
  • water (optional) or milk, as needed to make it a dough consistency (optional)

Recipe

  • 1 combine together all the ingredients, except for the bananas, and mix well.
  • 2 then add in the ripe, well-mashed bananas and mix well.
  • 3 add a splash or two of water or milk if it doesn't combine well (too dry).
  • 4 drop onto a greased baking sheet and bake for 12 minutes or until golden brown.
