Ingredients
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can black-eyed peas, drained
- 1 avocado, peeled and diced
- 2/3 cup cilantro, chopped
- 2 -3 green onions, chopped
- 3 -4 roma tomatoes, chopped
- 1/4 cup olive oil
- 1 1/2 cups red wine vinegar
- 2 garlic cloves, crushed
- 1 tablespoon ground cumin
- salt
- pepper
Recipe
- 1 combine first six ingredients.
- 2 whisk together the rest of the ingredients and add to the vegetable mix, toss to coat.
- 3 serve with pita chips or tortilla chips.
