Carrot-peppermint Stomach Soother

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 carrots, sliced
  • 4 cups water
  • 1 teaspoon dried peppermint or 1 peppermint tea bag

Recipe

  • 1 in a medium saucepan, combine all of the ingredients and bring to a boil. reduce the heat to medium-low, cover loosely, and simmer until the carrots are very tender, about 15 minutes. if you're using a tea bag, discard it now. blend or process the mixture until it is very smooth. sip warm.
  • 2 if the weather is damp: stir in a pinch of ground ginger before blending.
  • 3 if the weather is dry: stir in a teaspoon of lemon juice before blending.
