Breakfast Burritos

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 2 teaspoons low-fat margarine
  • 1/2 small onion, chopped
  • 1 (4 ounce) can diced green chilies, drained
  • 1/2 cup cooked lean ham, cubed
  • 1 carton egg substitute
  • salt and pepper
  • salsa, to taste
  • 4 10-inch flour tortillas

Recipe

  • 1 in a skillet, heat margarine and sauté onions till tender.
  • 2 add chilies and ham and continue to fry.
  • 3 add egg substitute, salt and pepper to skillet mixture.
  • 4 scramble over medium heat.
  • 5 as eggs solidify add salsa.
  • 6 warm tortillas.
  • 7 place equal amounts of egg mixture each tortilla and roll burrito style.
