Bob’s Lobster Bisque

Ingredients

- 3 cups lobsters
- 1/4 cup mushroom
- 2 tablespoons onions, minced
- 2 tablespoons carrots, finely chopped
- 1 3/4 cups heavy cream
- 24 ounces chicken broth
- 1 cup white (i prefer pinot grigio)
- 3 ounces tomato paste
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon salt
- 2 -3 butter
Recipe
- 1 1 melt butter in a large saucepan over medium-low heat. add the mushrooms, onion, and carrot. cook until tender, about 10 minutes. stir in the chicken broth, and season with the salt, cayenne pepper. bring to a boil, then simmer for 10 minutes.
- 2 2 pour the vegetable and broth mixture into a food processor, and add 1/4 cup of the lobster meat. process until smooth. return to the saucepan, and stir in the heavy cream, white , and the remaining lobster meat. cook over low heat, stirring frequently until thickened, about 30 minutes.
