Bob’s Lobster Bisque

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 3 cups lobsters
  • 1/4 cup mushroom
  • 2 tablespoons onions, minced
  • 2 tablespoons carrots, finely chopped
  • 1 3/4 cups heavy cream
  • 24 ounces chicken broth
  • 1 cup white (i prefer pinot grigio)
  • 3 ounces tomato paste
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 2 -3 butter

Recipe

  • 1 1 melt butter in a large saucepan over medium-low heat. add the mushrooms, onion, and carrot. cook until tender, about 10 minutes. stir in the chicken broth, and season with the salt, cayenne pepper. bring to a boil, then simmer for 10 minutes.
  • 2 2 pour the vegetable and broth mixture into a food processor, and add 1/4 cup of the lobster meat. process until smooth. return to the saucepan, and stir in the heavy cream, white , and the remaining lobster meat. cook over low heat, stirring frequently until thickened, about 30 minutes.
