Breakfast Burrito With Green Beans

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup onion, chopped
  • 1 cup cauliflower, cooked and finely chopped
  • 6 eggs
  • 1/2 cup no-salt-added green beans
  • 1/2 cup cheese, shredded (optional)
  • 2 tablespoons cilantro, chopped
  • 4 gluten-free tortillas

Recipe

  • 1 saute onion in olive oil until translucent.
  • 2 add chopped cauliflower to onion.
  • 3 remove from pan.
  • 4 scramble eggs and pour into pan; cook slow.
  • 5 add drained green beans.
  • 6 add onion mixture.
  • 7 heat tortillas.
  • 8 divide egg mixture tortilla. sprinkle chopped cilantro over. make burrito.
  • 9 serve with salsa.
  • 10 add cheese while cooking if you want.
