Breakfast Burrito With Green Beans

Ingredients

- 2 tablespoons extra virgin olive oil
- 1/4 cup onion, chopped
- 1 cup cauliflower, cooked and finely chopped
- 6 eggs
- 1/2 cup no-salt-added green beans
- 1/2 cup cheese, shredded (optional)
- 2 tablespoons cilantro, chopped
- 4 gluten-free tortillas
Recipe
- 1 saute onion in olive oil until translucent.
- 2 add chopped cauliflower to onion.
- 3 remove from pan.
- 4 scramble eggs and pour into pan; cook slow.
- 5 add drained green beans.
- 6 add onion mixture.
- 7 heat tortillas.
- 8 divide egg mixture tortilla. sprinkle chopped cilantro over. make burrito.
- 9 serve with salsa.
- 10 add cheese while cooking if you want.
