Breakfast Banana-nut Bread

Ingredients
- 1/4 cup butter or 1/4 cup margarine
- 1/2 cup brown sugar
- 1 egg, beaten
- 1 cup old-fashioned oatmeal
- 1 1/2 cups mashed bananas (i used 3)
- 2 teaspoons vanilla
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup macadamia nuts
- 2 tablespoons flax seed meal
Recipe
- 1 combine sugar and butter until creamy.
- 2 add egg, mix well.
- 3 add oatmeal, bananas, and vanilla.
- 4 combine remaining ingredients in a seperate bowl, and then add to banana mixture until just moistened.
- 5 prepare a loaf pan with cooking spray & flour.
- 6 pour in batter.
- 7 bake in 350 degree oven for 1 hour or until tester comes out clean.
