Breadfruit Doughnuts

Ingredients
- 1 egg
- 1 cup ripe breadfruit, uncooked and mashed
- 2 tablespoons shortening
- 1 cup flour
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 teaspoons baking powder
- 1/2 cup sugar
- oil (for frying)
Recipe
- 1 beat the egg in a bowl and add uncooked breadfruit pulp and shortening.
- 2 mix well.
- 3 sift dry ingredients together and add to the egg/pulp/shortening mixture.
- 4 mix well.
- 5 preheat your frying oil to 370°f.
- 6 drop by spoonfuls into oil and fry until golden brown.
- 7 drain on paper towels.
- 8 shake in a bag with sugar to coat outside.
