Braised Lamb & Apple Stew

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 teaspoons vegetable oil
  • 1 lb lamb tenderloin, cut into 11/2 inch chunks
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon all-purpose flour
  • 15 1/2 ounces chicken broth
  • 2 gala apples, cored and each cut into 8 wedges
  • 8 very small red potatoes, halved
  • 1 cup baby carrots
  • 1/2 teaspoon dried thyme
  • 3 tablespoons honey dijon mustard

Recipe

  • 1 heat oil in a 5 to 6 quart pot over medium-high heat. season the lamb with salt and pepper and coat with flour.
  • 2 cook lamb 4 minutes until browned , turning once , remove to a plate.
  • 3 add broth , apples , potatoes , carrots and thyme to pot and bring to a boil. cover , reduce heat and simmer 12 minutes or until potatoes are tender.
  • 4 stir in lamb and mustard. cover and simmer 4 to 5 minutes or until lamb is just cooked thru.
