Braised Lamb & Apple Stew

Ingredients
- 2 teaspoons vegetable oil
- 1 lb lamb tenderloin, cut into 11/2 inch chunks
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon all-purpose flour
- 15 1/2 ounces chicken broth
- 2 gala apples, cored and each cut into 8 wedges
- 8 very small red potatoes, halved
- 1 cup baby carrots
- 1/2 teaspoon dried thyme
- 3 tablespoons honey dijon mustard
Recipe
- 1 heat oil in a 5 to 6 quart pot over medium-high heat. season the lamb with salt and pepper and coat with flour.
- 2 cook lamb 4 minutes until browned , turning once , remove to a plate.
- 3 add broth , apples , potatoes , carrots and thyme to pot and bring to a boil. cover , reduce heat and simmer 12 minutes or until potatoes are tender.
- 4 stir in lamb and mustard. cover and simmer 4 to 5 minutes or until lamb is just cooked thru.
