Bran Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup whole wheat flour (or 1/2 white and 1/2 whole wheat)
  • 1 cup bran flakes
  • 1/2 cup raisins (or other dried fruit)
  • 1/2 cup chopped nuts (optional)
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 3 tablespoons safflower oil
  • 2 tablespoons honey
  • 2 tablespoons molasses
  • 1 teaspoon vinegar

Recipe

  • 1 preheat oven to 425 degrees f.
  • 2 prepare muffin tins by lining with paper liners or spray with cooking spray.
  • 3 combine first 6 ingredients (flour- salt) in a large bowl stirring with a wooden spoon.
  • 4 in a small bowl combine remaining ingredients (egg- vinegar). set aside.
  • 5 make a well in the center of the dry ingredients and add egg mixture. stir with wooden spoon to combine.
  • 6 spoon mixture into prepared muffin tin.
  • 7 bake for 15-20 minutes or until done.
