Breakfast "mess"

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1 teaspoon butter
  • 1/8 cup onion, chopped
  • 1/8 cup red pepper, chopped
  • 1 small potato, shredded
  • 1 egg
  • 1 egg white
  • 1/2 teaspoon red pepper flakes
  • salt
  • garlic powder
  • paprika

Recipe

  • 1 melt 1 tsp of butter in a small pan over medium-high heat (should stay in medium-high heat the whole time).
  • 2 when the butter melts, add the onion and pepper and cook down for about 3 minutes.
  • 3 add the shredded potato, and cook for 3-5 more minutes (depending on how cooked you'd like them).
  • 4 while the potatoes are cooking, add seasonings (salt, garlic powder, etc) to taste.
  • 5 after 3-5 minutes, add the egg and the egg whites (you can also add some kind of cheese at this point, if you'd like).
  • 6 stir eggs and potato mix together quickly with a spatula while it cooks, remove after 1-2 minutes.
