Breakfast Burritos

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 chorizo sausage, chopped
  • 1 onion, chopped
  • 1/2 green pepper, chopped
  • 2 -3 potatoes, peeled, cut in small pieces
  • 3 eggs
  • hot sauce
  • cheddar cheese or mexican blend cheese, shredded

Recipe

  • 1 in a skillet, over med-low heat, add sausage, onion, green pepper, potatoes and cover stirring occasionally.
  • 2 do not let sausage cook crisp!
  • 3 when potatoes are cooked soft, push to side of skillet and add eggs.
  • 4 when eggs start to 'set', scramble mixture together.
  • 5 cooking about 4 minutes.
  • 6 put mixture in a bowl.
  • 7 in a clean skillet, med-low heat, add 1 large flour tortilla.
  • 8 heat each side about 1 minute, do not burn!
  • 9 remove to a plate, add large spoonful egg mixture to center of tortilla, sprinkle with cheese.
  • 10 fold tortilla over mixture (folding directions are on tortilla wrapper).
  • 11 repeat.
  • 12 makes 4-5 burritos.
  • 13 enjoy.
  • 14 try w/ a little homemade salsa.
  • 15 also great to make ahead, wrap in aluminum foil & refrigerate.
  • 16 next morning place wrapped burritos in a pan & heat in oven a few minutes til warm.
  • 17 be creative when making these!
