Breakfast Burrito

Ingredients

  • Servings: 4
  • 4 ounces chorizo sausage
  • 1/2 red onion, chopped fine
  • 3 garlic cloves, crushed
  • 4 ounces green chilies, chopped
  • 1/2 cup cilantro leaf, chopped
  • 1 cup egg substitute (i use egg beaters)
  • 4 corn tortillas
  • 1/2 cup low-fat cheddar cheese, shredded

Recipe

  • 1 spray a skillet with some cooking spray to ensure that nothing sticks. break the chorizo into small pieces and cook until they're done. there's usually a bit of grease, so i drain that right away.
  • 2 add in the onion, garlic, chiles, and cilantro. saute until the onions are soft, which is usually about a minute or two. add in the egg subsitute and scramble everything together.
  • 3 i put the tortillas in the toaster oven to warm then up. once they're done put the egg mixute in them, towards the center. i sprinkle the cheese over that, thenr oll them up!
