Brussels Sprouts With Bacon, Almonds And Cream

Ingredients

- 10 ounces brussels sprouts
- 1/2 ounce butter
- 1 tablespoon olive oil
- 3 1/2 ounces smoked bacon, diced
- 1 tablespoon sliced almonds
- 7 tablespoons heavy cream
- 1 lemon, juice and zest of
- salt and pepper, to taste
Recipe
- 1 trim the sprouts and drop into boiling water. simmer until nearly cooked and then drain.
- 2 heat the butter and oil in a large pan. add the bacon and almonds, and sauté until brown.
- 3 add the sprouts and cook for a further 2-3 minutes, stirring.
- 4 allow to cool for a few minutes and then add the cream and lemon zest.
- 5 return to the heat and cook for 4 minutes until the cream has reduced.
- 6 season with salt and pepper and add a dash of lemon juice. serve immediately.
