Bobby's Bbq Sauce

Ingredients
- 2 tablespoons canola oil
- 1 spanish onion, chopped
- 3 garlic cloves, chopped
- 1 cup ketchup
- 2 tablespoons dried ancho chile powder
- 1 tablespoon paprika
- 1 tablespoon dijon mustard (heaping tablespoon!)
- 1 tablespoon red vinegar
- 1 tablespoon worcestershire sauce
- 1 chipotle chile in adobo, chopped
- 2 tablespoons dark brown sugar
- 1 tablespoon honey
- 1 tablespoon molasses
- kosher salt
- fresh ground pepper
Recipe
- 1 heat the oil over medium-high heat in a heavy-bottomed saucepan.
- 2 add the onion; cook until soft, 3 to 4 minutes. add the garlic and cook for 1 minutes. add the ketchup and 1/3 cup water, bring to a boil and simmer for 5 minutes. add the remaining ingredients (except salt and pepper); simmer for 10 minutes, or until thickened, stirring occasionally.
- 3 transfer the mixture to a food precessor; puree until smooth. season with salt and pepper. pour into a bowl; cool to room temperature.
- 4 brush on burger patties as they cook, and spoon more on when assembling burger.
