Braised Peas With Prosciutto

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 1/3 cup reduced-sodium chicken broth
  • 2 cups frozen peas
  • 2 ounces prosciutto, diced
  • salt & freshly ground black pepper, to taste.

Recipe

  • 1 melt butter in a saucepan, add onions and cook over medium heat until soft and golden brown.
  • 2 add broth, bring to a boil, add peas, return to a boil, cover, reduce heat to low and simmer until tender (the amount of time will depend on the size of the peas, so check the package directions).
  • 3 add prosciutto, cook uncovered until most of the liquid is absorbed and season with salt and pepper.
