Ingredients

- 3 tablespoons olive oil
- 1 cup onion, chopped
- 2/3 cup carrot, chopped
- 1/2 cup celery, chopped
- 1 1/4 cups green lentils, picked over
- 4 cups chicken broth
Recipe
- 1 saute the veggies for 5 minutes. add lentils and stir one minute.
- 2 add stock and bring to a boil. reduce and cook for 35 minutes. add salt and pepper for seasoning.
